A favorite old Jamaican family recipe for steamed cabbage and it's very easy.
Cabbage,onions salted codfish (salt-fish),tomato pepper are sauteed in coconut oil, hearty dish that will surprise you.I recommend using a good nonstick pan.
1 Head Cabbage Shredded -- about 2 1/2 LB
1/2 Onions (Finely chopped) - 3/4cup
1/8 teaspoon black pepper
1/4 lb salted codfish
1 tomato (thinly sliced)
1 stem thyme
Method: Boil codfish for about 20-30 min to rid it of salt. Break fish into small pieces and separate all bones.
cut a solid cabbage in into quarters wash then shred Finely.
Heat large nonstick frying pan Over medium heat. Add coconut oil.
Add Shredded cabbage and onion and all other ingredients including fish.
Cook for 10 minutes of until cabbage shrinks. At this time, stir occasionally, for 5 minutes longer or until tender.
Serve hot with cooked rice or any other dish. Makes 4 to 6 servings. Recommended for vegetarians who enjoy fish.
Preparation time: 10 minutes. Cooking time: 150-20 minutes.
